EJ introduces Penelope’s, the latest opening from the Rebel Restaurant Group, the third venue in a triumphant trio. Penelope’s follows the success of The Brunch and Cocktail Club and Emily’s Formby.

Rebel Restaurants Group, renowned for its trailblazing North West venues like Emily’s in Formby and The Brunch & Cocktail Club in Liverpool city centre, has unveiled its latest masterpiece this summer – Penelope’s on the Park. Nestled along the historic Rotten Row, at the edge of Victoria Park in Birkdale, this new gem epitomises Rebel’s unwavering commitment to crafting extraordinary dining experiences.

In a world where every penny spent on hospitality must count, Rebel Restaurants understands the importance of making each visit unforgettable. Their philosophy is straightforward: if a guest chooses to dine at a Rebel Restaurant, it has to be exceptional. Penelope’s is a testament to this ethos, delivering everything diners expect from the Rebel brand – adventurous menus, a remarkable team, and interiors as stunning as the cuisine.

Taking ownership of a historic building dating back to the 1900s, Rebel aimed for Penelope’s on the Park to pay reverence to Southport’s rich history. The team spent over a year meticulously transforming this regional treasure, infusing it with contemporary flair while preserving its original charm. The result is a venue that not only honours its past but also sets a new benchmark for luxury dining in the North West.

The décor is spectacular – a symphony of blues adorned with bespoke artwork, bold fabrics, Mediterranean ceramics, and seasonal florals. Penelope’s pièce de résistance? Its remarkable skylight, a true labour of love for the team. Originally envisioned as a traditional skylight, the plan was reimagined when structural challenges arose. But in true Rebel fashion, the team improvised, installing a custom metal framework housing bespoke glass panels designed by the talented Scottish artist Heather Hackett. These panels, which light up at the touch of a button, ensure that even on the cloudiest days, Penelope’s is bathed in a summer glow.

The cuisine at Penelope’s on the Park is both exquisite and thoughtfully curated, thanks to the expertise of Executive Chef Mike Hendren. The menus, spanning from brunch to evening dinner, offer a diverse array of dishes crafted with passion and precision. Highlights include Neapolitan-style pizzas made with fresh, daily-prepared dough, an array of pasta dishes (special mention to the highly anticipated 100 Layer Lasagne), and the unforgettable 24-Hour Chicken, prepared on a live fire Asado grill. With options for children and consideration for all dietary needs, Penelope’s ensures every guest leaves satisfied.

As one of the most eagerly awaited restaurant openings in the North West, Penelope’s has already made waves. The day bookings were announced, the website crashed under the weight of demand and the restaurant’s Instagram account soared to 10,000 followers before the doors even opened.
