The Secret Ingredient: Tiki’s Chopping Board Cordial
The backbone of many a cocktail and the flavour foundation of a million, trillion soft drinks, the humble cordial needs little introduction. But have you ever thought of making your own? Better yet, have you ever thought of making your own from the bits and pieces that you’d normally just bin? Trash Tiki’s Kelsey Ramage and Iain Griffiths have, and they’ve gotten pretty good at it too.
The idea is to throw your typical offcuts (anything from citrus zests to mint stems, overly bruised fruit to cucumber rinds) into a jar with an equal amount of water. Leave it to soak overnight, drain and then add a little sweet (sugar) or sour (malic acid) to taste. The end result is a one-off cordial that makes your kitchen waste go that little bit further.
